Smashed Potatoes with garlic, lemon, and rosemary

2 pounds fingerling potatoes, scrubbed and washed

3 cloves Garlic, peeled and sliced thinly

1 Lemon, zest the lemon and juice it

¼ teaspoon Red Pepper flakes

1 teaspoon salt

1/2 teaspoon black Pepper

2 teaspoon rosemary leaves

1 tablespoon Olive oil

In a bowl add the potatoes, garlic, red pepper flakes, lemon juice, lemon zest, salt, black pepper and rosemary leaves.

Dump this on a tray. Preheat the oven to 375 degrees, bake the potatoes for 25 minutes more or less depending on your oven. Pierce the potatoes and see if they are cooked thoroughly.

Smash the potatoes add a little olive oil or salt as needed. Serve hot.
