Samosas with green mint and cilantro chutney



For the Pastry;

4 sheets of store bought Puff Pastry, defrosted and thawed

For the Filling:

2 pounds, Russet Potatoes, boiled and peeled

1 Onion, peeled and finely chopped

3 to 4 garlic cloves, peeled and chopped finely

2 Inch piece ginger, peeled and finely chopped

2 green chilis, deseeded and finely chopped

2 Tablespoon Coriander powder

2 teaspoon Cumin powder

1 teaspoon Cumin seeds, roasted

1 Tablespoon Chaat Masala

3 to 4 Tablespoon Lemon Juice

1 teaspoon Turmeric powder

2 teaspoon Salt

1 teaspoon Black pepper

1 large egg, beaten and mixed with 2 teaspoon water

1 table Oil

Peel the boiled potatoes in a bowl. Mash the potatoes. Add all the above mentioned ingredients.

Fill each square with the filling on one side. Leave some space on the edges. Now take the other edge and cover the filling. You should have a triangle with the filling inside. Add the egg wash on the sides of the pastry enough to seal it. Add the egg wash with a brush. Crimp the edges shut.

Fill all the squares until it is all done. If you have extra filling you can serve it as a side. You should have 16 samosas.

Preheat the oven to 400 degrees. Lay some parchment paper. On a large tray lined with parchment paper place the samosas. Brush the samosa on both sides with oil. Bake for 20 to 25 minutes. Place the samosas at a distance not too close to each other.

Serve it with Cilantro and Mint chutney. Serve hot.

Please note: If you are a vegan then make a paste of flour and water instead of egg wash.

Also you can make your own dough instead of store bought puff pastry by mixing flour, water and 3 teaspoon oil or 3 teaspoon butter or ghee. Knead the dough and let it rest.

Cilantro and Mint Chutney

1 bunch Cilantro leaves, washed and chopped finely

1 bunch Mint leaves, washed and chopped finely

2 green chilis, deseeded and chopped finely

2 inch Ginger, peeled and chopped finely

2 to 3 Garlic cloves, peeled and chopped finely

1 small Onion, peeled and finely chopped

1 Lime, cut it and juice it.

1 teaspoon Salt

1 teaspoon black Peppercorns

In a Vitamix or a mixture add all the ingredients and grind it thoroughly. Add salt and refrigerate serve cold. Add a little oil on top to give it a sheen.
