1 large English Cucumber, peeled and make thin slices
1/2 teaspoon fresh Ginger, peeled and grated
1 Garlic clove, peeled and grated
2 Scallions, trim it and slice thinly
1/8 teaspoon Cayenne pepper
3 Tablespoon Olive Oil
1 1/2 tablespoon Rice Vinegar
1 teaspoon Soy Sauce
1 Tablespoon Sesame oil
2 Tablespoon Peanuts, chopped finely
3 Tablespoons Olive oil or the oil of your choice
3 Tablespoon Cilantro leaves, chopped finely
2 Tablespoon Mint leaves, chopped finely
3/4 teaspoon Salt
1/2 teaspoon Sugar
1 teaspoon Black pepper, freshly ground
Peel the cucumber and make slices on a mandolin in a bowl. Add salt, Let it rest for 10 minutes Drain the cucumber slices on a paper towel. Transfer into the bowl, add garlic, ginger, scallions, cayenne pepper and black pepper.
In another bowl whisk together the rice vinegar, soy sauce, sesame oil, olive oil and sugar. Now add the vinegar mixture to the cucumbers.
Add Cilantro leaves, mint leaves and chopped peanuts. Taste to check the salt. Keep it in the refrigerator until ready to serve.
