Cardamom Rice with Cilantro Drizzle


1 cup Basmati Rice

1 Tablespoon Olive Oil

5 to 8 Cardamom Pods, break open the pods and remove the seeds

2 Cloves

1 Bay Leaf

1 cup of golden raisins

1 cup Almonds halves

1/2 teaspoon Turmeric powder

1 teaspoon Salt

Cilantro Drizzle:

1 to 1/2 cup Cilantro leaves, chopped finely

1 to 2 teaspoon Olive oil or butter

1 teaspoon lemon juice

Wash the rice a few times, drain all the water. In a pot add olive oil, 5 to 8 bruised Cardamom pods, cloves, bay leaf, turmeric powder, rice and saute this for a few minutes. Add raisins and almonds. Saute for a minute.

Add salt, 2 cups water and start to cook. Once the water starts boiling. Reduce to a very low temperature and cover it. Let it cook for 10 minutes. See that all water evaporates and the rice is cooked.

Now mix all the ingredients for the cilantro drizzle and one the rice is done add this to the rice and cover it with a lid. Serve hot.
