Baked Cauliflower Shawarma


1 large Cauliflower, remove leaves

Spiced Butter or Ghee:

1/4 cup Butter or Ghee

1 Lemon, juiced

2 cloves, Garlic, minced

2 Tablespoon Cilantro leaves, chopped

1 Tablespoon Coriander seeds

2 teaspoon Cumin seeds

1 teaspoon Cardamom powder

1 teaspoon Allspice powder

1 teaspoon Salt

1 teaspoon Black Pepper, freshly ground

Parsley Yogurt Sauce:

2 Tablespoons, Lemon Juice

1 cup Parsley, chopped

2 cups Greek Yogurt

2 cloves Garlic, finely minced

1 teaspoon Salt


1 cup Parsley

1/2 cup pine nuts

Remove the cauliflower leaves and make it flat at the bottom so that it can sit on a large tray.

Next take a bowl and make the spiced butter or ghee.

Make slits in the cauliflower and pour the ghee or butter and rub the cauliflower with it.

Bake it at 375 degrees for 25 minutes. Check if it is done. If not cook it some more.

Make the Parsley Yogurt sauce and pour over the cauliflower when it has cooled slightly

Garnish it with pine nuts and parsley. Serve at room temperature.
