Arugula Salad with beets, tomato and feta cheese


3/4 bag of arugula leaves

4 beets, scrub the dirt away

4 tomatoes, chopped into pieces

1/4 teaspoon salt

1/2 cup torn feta cheese



2 tablespoon lemon juice

3 tablespoon olive oil

1 tablespoon honey

1/2 teaspoon salt

1 teaspoon ground pepper

Scrub the beets of any dirt and coat them with oil and boil the beets in a pot of boiling water for 25 to 30 minutes. Set aside and let the beets cool. Chop into beet slices.

In a large bowl add arugula leaves, tomatoes, beet slices and salt.

Make dressing by adding all the ingredients in a small bowl.

Add dressing. Add feta cheese. Mix the salad and serve.

Please add walnuts to this salad if you like. It will provide some crunch.
