2 15 ounces canned artichoke hearts
1 ball of fresh mozzarella cheese
1 can of pitted green olives
1 red onion, thinly sliced
3 tablespoon parsley leaves, washed and chopped
1 teaspoon freshly ground pepper
2 garlic cloves, grated
1/4 teaspoon red pepper flakes
1 teaspoon Dijon mustard
2 tablespoon red wine vinegar
2 tablespoon olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
In a bowl add canned artichokes, green olives, sliced red onion, mozzarella slices.
In a small bowl add garlic, mustard, olive oil, red wine vinegar, salt and pepper.
Add the dressing to the salad. Check for salt and pepper and add parsley leaves.
