Spicy Saturday: Fenugreek

Fenugreek seeds and Fenugreek leaves

Fenugreek is a plant about 3 feet tall. Fenugreek is also called Greek hay. It is a native of Asia and the Mediterranean region. Its leaves and seeds are both edible. Fenugreek leaves are used in vegetable dishes and seeds are used in lentil dishes and fish curries in Indian cooking.

Fenugreek has a sweet maple syrup like taste. Fenugreek leaves and seeds both have a bitter taste. Fenugreek leaves are added to spinach leaves and potatoes in Indian cuisine. Use fenugreek sparingly otherwise it will overwhelm the dish with bitterness. Fenugreek is used as fresh leaves, dried leaves and in seed form.

Fenugreek has numerous benefits. Effects on blood sugar levels, appetite control, cholesterol levels, heartburn and inflammation.
