Exotic Ingredients: Red Kidney Beans



Kidney Beans (Phaseolus Vulgaris) is a legume. Raw beans can be toxic. Red Kidney beans provide a good source of protein. Well cooked kidney beans provide a healthy and well balanced meal. Some people are allergic to beans.


Beans take longer to digest and has a low glycemic index. It reduces blood sugar. Kidney beans are high in fiber. It is known that high fiber foods can reduce the risk of colon cancer. Eat well cooked beans. Uncooked beans can create bloating and flatulence.


Always soak the dried beans in plenty of water and let it sit for 24 to 48 hours.

Add 1 teaspoon of baking soda to the water. This will breakdown the hard wall of the bean and make it softer.


Canned beans can stay in the pantry until the expiration date. If using canned red kidney beans. Rinse it twice under cold water and then use it. When cooking red kidney beans use fresh water. Do not add salt until the beans are cooked completely.
