Millet is an ancient grain which is widely consumed in African and Asian countries. Millet is a small round grain which is grown in India and parts of Africa. Millet is also consumed by humans and also used as a feed for livestock. Millet comes in many varieties but pearl millet is used for human consumption. Millet is high in protein content and high in calcium, phosphorus and magnesium. It helps in diabetes by controlling blood sugar. It can be used in gluten free diets. Millet is versatile and can be used in place of rice. 1 cup of Millet and 2 cups of water cook for 20 to 22 minutes at a low temperature. Millet grains are used in breakfast like a porridge or millet flour can be used to make breads, cake, muffins and cookies. In Indian cuisine it can be used to making breads and pancakes. It can be stored in the pantry in an airtight container for 6 months or more.
