Spicy Saturday: Cinnamon

Our first spice is “Cinnamon”.  Cinnamon has a rich, pungent flavor.  There are 2 varieties of cinnamon, Cassia is paler and comes in thin barks which can be easily broken. It has a strong spicier flavor.  Ceylon Cinnamon comes in thicker quills. It has a sweeter taste.  Cinnamon can be bought in grocery stores or in ethnic stores or even online.  Cinnamon can be stored in a dark cool place for 2 years. Cinnamon has many health benefits. It boosts your metabolism, it has anti-inflammatory properties, it can help control your blood sugar and cholesterol.  It also helps with menstrual pain and disorders. In USA we find cinnamon in powdered form which can be sprinkled on your coffee, tea, or oatmeal. Cinnamon is mostly used in Indian curries. Chai masala in India uses cinnamon. It is used also in Indian desserts. It imparts a warm soothing taste to the curries. Cinnamon is truly a wonder spice.
