Tomato Salad with Mascarpone Dressing

Ingredients:

3 large Tomatoes, chopped in chunks

10 Mint leaves. chopped finely

1/2 teaspoon Salt

1/2 teaspoon Black Pepper, freshly ground

Mascarpone Dressing:

3 tablespoons Mascarpone Cheese

1 cup Greek Yogurt

2 teaspoon Olive Oil

1/2 teaspoon Mustard

1/4 teaspoon Honey

1/4 teaspoon Salt

1/4 teaspoon Black Pepper, freshly ground

Cut the tomatoes in large wedges, add salt, black pepper, and mint leaves.

Make the Mascarpone dressing in a bowl by adding mascarpone cheese, Greek yogurt, olive oil, mustard, honey, salt and pepper.

Add the dressing to the tomatoes and mix well. Serve as it is.
